Grain Free Carrot Cake Recipe
If you like carrot cake give this grain-free carrot cake recipe a try. It is a good source of protein, and it is delicious!
Preparation:
Preheat oven to 350 degrees
line an 8 X 8 baking pan with parchment paper
Ingredients
Combine:
6 eggs
8 medjool dates – pitted
6 T. melted butter
1 tsp vanilla
Blend in blender until smooth and dates are well integrated.
In a separate, small bowl combine:
1/2 cup almond flour
1/4 cup coconut flour
1/4 tsp sea salt
1/4 tsp nutmeg
1/4 tsp ginger
1 tsp cinnamon
1/2 tsp baking soda
Additional ingredients:
1 cup grated carrot
1/2 cup chopped pecans
1/2 cup raisins
1 T apple cider vinegar
Directions:
Break eggs into a large bowl first, and then pour them into your blender glass. This way, if you accidentally get a piece of egg shell added you can more easily remove it. Add the pitted dates and blend until smooth.
Pour the blended egg mixture into a large bowl. Add the melted butter, vanilla, and apple cider vinegar.
Add the dry ingredients, grated carrots, raisins, and chopped pecans.
Mix thoroughly
Pour the batter into the prepared pan.
Bake 35 minutes or until done.
Enjoy your guilt-free, grain-free carrot cake!
Variations:
To make fresh apple cake, omit the carrots and add chopped fresh apple. Try walnuts in place of the pecans.
For a delicious, guilt-free topping try “pear cream” [pictured] or unsweetened applesauce.
