Pear Cream Recipe: a Non Dairy Topping

Easy to make and delicious – this non-dairy topping can stand alone or serve as a base for a breakfast or dessert offering.

This recently created recipe continues to evolve.  Its working title is pear cream [a suggestion from a friend], but I am open to other suggestions.

Ingredients:

1 15 oz. can of organic pears [in fruit juice]

“cream” from 2 cans of full-fat coconut milk  [Use only the solidified fat for this recipe.  Save the “water” portion for a smoothie or add it to some soup.]

1 packet unflavored gelatin

juice from 1 lime

1 T. vanilla

Directions:

Place two 13.5 oz. cans of full-fat coconut milk in the refrigerator for several hours or overnight.

When you are ready to make this recipe, separate the solid coconut fat from the liquid.  Reserve the liquid for another use.

Pour the juice from the pears into a small pan.

Sprinkle the gelatin onto the juice and let it sit for a few minutes.

Heat the juice/gelatin mixture on low heat until the gelatin dissolves.

Put the pears, coconut cream [fat], lime juice, and vanilla into your blender container. Add the juice/gelatin mixture. Blend until completely smooth.

Pour mixture into a bowl or pie pan. Cover and chill until set.

Flavoring suggestions

Choose one or more of the following:

Juice from 1 lime

Juice from 1 lemon

1 T vanilla

1/8 tsp stevia powder

My current favorite is lime juice and vanilla.

I find that this is sweet enough without adding stevia, but if you like it sweeter [especially if you are using citrus juice to flavor it] you might like to add a tiny amount of stevia.  1/8th tsp.

Serving suggestions:

Top with fresh berries such as blueberries or strawberries.  When I serve it with berries, I omit the citrus juice as it seems to overpower the berries.

Top with crunchy granola.

Pour the freshly made mixture over a crumb crust in a pie pan or a springform cake pan and create a key lime pie or a cheesecake!!!

Add cinnamon and chopped pecans to the topping and serve it over baked or steamed apple chunks.

Other options:

Use one 8 oz package of cream cheese instead of the coconut cream.

To make the dish vegan, use the coconut cream and choose agar agar in place of the unflavored gelatin.
